Ingredients

1 lb frozen pierogies
8 oz cremini mushrooms, sliced
2 cups fresh spinach
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 medium onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme

Instructions

1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until translucent.
3. Add mushrooms to the skillet, cook until softened, about 5 minutes.
4. Stir in heavy cream, salt, pepper, and thyme, bringing the mixture to a gentle simmer.
5. Add fresh spinach, stirring until wilted.
6. Layer frozen pierogies at the bottom of a casserole dish.
7. Pour the mushroom and spinach cream sauce over the pierogies.
8. Top with shredded mozzarella and Parmesan cheese.
9. Bake in preheated oven for 25 minutes or until cheese is golden and bubbly.
10. Allow to cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until heated through.
