Ingredients
2 lbs russet potatoes, peeled and diced
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 tbsp butter
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh parsley, chopped
1 tsp dried thyme
1/2 cup shredded cheddar cheese (optional)
2 tbsp olive oil
Instructions
1. Heat olive oil in a large pot over medium heat and sauté onions until translucent.
2. Add garlic and cook until fragrant, about 1 minute.
3. Stir in potatoes and sauté for 3-4 minutes.
4. Pour in chicken broth and bring to a boil, then lower heat to a simmer.
5. Cook until potatoes are tender, about 20 minutes.
6. Use an immersion blender to partially blend the soup, leaving some potato chunks for texture.
7. Stir in heavy cream, butter, salt, pepper, parsley, and thyme; simmer for 5 more minutes.
8. Add cheddar cheese if using and stir until melted.
9. Serve hot and garnish with additional parsley.
Storage
Let the soup cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3 days.
Reheating
Reheat the soup on the stove over low heat, stirring occasionally until warmed through. Do not bring to a full boil to prevent curdling.
