Creamy Dill Potato Salad

Ingredients
2 lbs red potatoes
1 cup mayonnaise
1/2 cup sour cream
2 tbsp fresh dill, chopped
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/2 cup celery, chopped
1/4 cup red onion, finely chopped
Instructions
1. Boil the red potatoes in salted water until tender, about 20 minutes. Drain and let cool.
2. In a large bowl, mix mayonnaise, sour cream, chopped dill, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until smooth.
3. Cut cooled potatoes into bite-sized pieces and add to the dressing along with celery and red onion.
4. Gently toss everything together until well combined.
5. Refrigerate for at least 1 hour before serving to enhance flavors.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in the microwave if desired, though it is best served cold.
