Creamy Chicken Forestière is a delightful twist on the classic Chicken Ala King, infusing earthy mushroom flavors with tender chicken in a creamy sauce, making it a perfect comfort dish for any occasion.

Ingredients

1 1/2 lbs boneless, skinless chicken breast, cubed
3 tbsp unsalted butter
1 cup white button mushrooms, sliced
1 cup shiitake mushrooms, sliced
1/2 cup onion, finely chopped
1/2 cup green bell pepper, chopped
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1/4 cup dry white wine
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/4 cup fresh parsley, chopped

Instructions

1. In a large skillet, melt butter over medium heat and add the chicken pieces. Cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
2. In the same skillet, add the mushrooms, onion, and green bell pepper. Sauté until vegetables are softened, about 5 minutes.
3. Add garlic and cook for an additional 1 minute. Sprinkle flour over the vegetables, stirring constantly for 2 minutes.
4. Gradually whisk in chicken broth, heavy cream, and white wine. Bring to a simmer and cook until thickened, about 5 minutes.
5. Return chicken to the skillet, add salt, pepper, and thyme, and simmer for another 2-3 minutes.
6. Stir in fresh parsley just before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over low heat until warmed through, adding a splash of chicken broth if needed to loosen the sauce.
