Creamy Chicken and Herb Gnocchi Soup

Ingredients

1 lb boneless, skinless chicken breasts
2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
4 cups chicken broth
1 cup heavy cream
1 lb potato gnocchi
1/2 cup frozen peas
1/4 cup fresh parsley, chopped
1 tsp fresh thyme leaves
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated parmesan cheese

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, garlic, carrot, and celery; sauté for 5 minutes until softened.
3. Add chicken breasts and cook until browned on all sides, about 8 minutes.
4. Pour in chicken broth and bring to a boil.
5. Reduce heat, cover, and simmer for 15 minutes.
6. Remove chicken, shred it using two forks, and return to the pot.
7. Stir in heavy cream and bring back to a simmer.
8. Add gnocchi and peas, cooking until gnocchi float, about 3 minutes.
9. Stir in parsley, thyme, salt, and pepper.
10. Serve hot, garnished with parmesan cheese.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat over medium heat on the stove, stirring occasionally until warmed through.
