Creamy Carrot Potato Soup

Ingredients
2 tbsp unsalted butter
1 large onion, diced
2 cloves garlic, minced
4 large carrots, peeled and sliced
4 medium potatoes, peeled and diced
4 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper to taste
2 tbsp fresh dill, chopped
1/2 tsp smoked paprika
Instructions
1. Melt the butter in a large pot over medium heat. Add the onion and garlic, cooking until the onion is translucent.
2. Add the carrots and potatoes to the pot, stirring for 2-3 minutes until they begin to soften.
3. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer until the vegetables are tender, about 20 minutes.
4. Use an immersion blender to puree the soup until smooth.
5. Stir in the heavy cream, salt, pepper, and smoked paprika. Heat through but do not boil.
6. Serve hot, garnished with fresh dill.
Storage
Store the soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a saucepan over medium heat, stirring occasionally, until warmed through.
