Cranberry Walnut Oatmeal Apple Crisp

Ingredients

3 lbs apples, peeled, cored, and sliced
1 cup fresh or frozen cranberries
1 cup granulated sugar
1/2 cup brown sugar
1 cup all-purpose flour
1 cup rolled oats
1/2 cup unsalted butter, chilled and cubed
1/2 cup chopped walnuts
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tbsp lemon juice

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine sliced apples, cranberries, granulated sugar, lemon juice, cinnamon, and nutmeg. Mix well to coat the fruit evenly.
3. Transfer the fruit mixture into a greased 9x13 inch baking dish.
4. In another bowl, mix together flour, oats, brown sugar, walnuts, and salt. Add the cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
5. Sprinkle the oat mixture evenly over the fruit in the baking dish.
6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the fruit is bubbling.
7. Allow to cool slightly before serving.

Storage

Store leftover crisp in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave for 1-2 minutes until warmed through, or place the dish in a 350°F oven for 10-15 minutes.
