Cranberry-Pecan Brie Bites

Ingredients

1 sheet puff pastry
8 oz Brie cheese
1 cup fresh cranberries
1/4 cup brown sugar
1/4 cup chopped pecans
1 tbsp honey
1/2 tsp fresh rosemary, chopped
1 egg, beaten

Instructions

1. Preheat oven to 375°F (190°C).
2. Roll out puff pastry and cut into 12 equal squares. Place squares into a mini muffin tin.
3. Cut Brie into 12 small pieces and place one in each pastry square.
4. In a saucepan over medium heat, combine cranberries, brown sugar, and honey. Cook until cranberries burst, about 5 minutes.
5. Spoon cranberry mixture over Brie in each pastry.
6. Top with chopped pecans and a sprinkle of rosemary.
7. Brush pastry edges with beaten egg.
8. Bake for 15-20 minutes or until pastry is golden brown and Brie is melted.
9. Let cool slightly before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated 350°F oven for 5-7 minutes until warmed through.
