Cranberry Orange Delight

Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon orange zest
3/4 cup orange juice
1/4 cup unsalted butter, melted
1 large egg, beaten
1 1/2 cups fresh cranberries, chopped
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F and grease a 9x5 inch loaf pan.
2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
3. Stir in the orange zest for a fresh burst of flavor.
4. In another bowl, combine the orange juice, melted butter, and beaten egg.
5. Pour the wet ingredients into the dry ingredients, stirring until just combined.
6. Fold in the chopped cranberries and walnuts, if using.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store the bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
Reheating
To reheat, slice the bread and warm in a toaster oven at 300°F for 5-7 minutes, or microwave individual slices for 15-20 seconds.
