Crab and Avocado Crostini

Ingredients

1 lb fresh crab meat
2 ripe avocados
1 lime (juiced)
2 tbsp mayonnaise
1 baguette
2 tbsp olive oil
Salt to taste
Pepper to taste
1/4 cup chopped cilantro
2 cloves garlic (minced)
1/4 tsp red pepper flakes

Instructions

1. Preheat oven to 350°F.
2. Slice the baguette into 1/4-inch slices and brush each side with olive oil.
3. Place baguette slices on a baking sheet and toast in the oven for 10 minutes or until golden brown.
4. While bread is toasting, mash avocados in a bowl and mix in lime juice, salt, pepper, and half of the cilantro.
5. In another bowl, combine crab meat with mayonnaise, garlic, red pepper flakes, and remaining cilantro.
6. Spread avocado mixture generously on each toasted baguette slice.
7. Top each with a spoonful of the crab mixture.
8. Garnish with additional cilantro if desired.
9. Serve immediately and enjoy!

Storage

Store assembled crostini in an airtight container in the refrigerator for up to 1 day. For best results, store the avocado and crab mixtures separately from the bread.

Reheating

Reheat in the oven at 350°F for 5-7 minutes until warm. Avoid microwaving to prevent sogginess.
