Cozy Lentil Stew
Hearty and nourishing, this lentil stew is packed with vegetables and spices. Perfect for a cold evening, it’s as comforting as it is delicious.

Ingredients
1 tablespoon olive oil
1 large onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 1/2 cups dried green or brown lentils
6 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 bay leaf
Salt and pepper to taste
2 cups spinach, roughly chopped
Juice of 1 lemon
Instructions
1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until onions are translucent, about 5 minutes.
2. Stir in garlic, cumin, smoked paprika, coriander, and cayenne pepper, cooking for another 2 minutes until fragrant.
3. Add lentils, vegetable broth, diced tomatoes, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, for 30-35 minutes, until lentils are tender.
4. Remove bay leaf and stir in spinach and lemon juice. Cook for an additional 5 minutes until spinach is wilted.
5. Adjust seasoning with salt and pepper to taste before serving.
Storage
Allow stew to cool completely before transferring to an airtight container. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
Reheating
Reheat gently on the stove over medium heat until warmed through, or microwave in a microwave-safe bowl in 1-minute intervals, stirring in between.
