Coconut Lime Chicken Curry
A delightful twist on traditional chicken curry, this Coconut Lime Chicken Curry combines rich coconut milk with zesty lime and aromatic spices to create a vibrant and refreshing dish perfect for any occasion.

Ingredients
1.5 lbs chicken breast, cubed
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
1 tbsp ginger, grated
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1/2 tsp red chili powder
1 can (14 oz) coconut milk
1/4 cup chicken broth
Zest and juice of 2 limes
Salt and pepper to taste
1 tbsp fish sauce
1 bell pepper, thinly sliced
1 cup sugar snap peas
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a large pan over medium heat.
2. Add onion, garlic, and ginger; sauté until onion is translucent.
3. Stir in cumin, coriander, turmeric, and chili powder; cook for 1 minute.
4. Add chicken and cook until browned on all sides.
5. Pour in coconut milk, chicken broth, lime zest and juice, salt, pepper, and fish sauce.
6. Simmer uncovered for 20 minutes, stirring occasionally.
7. Add bell pepper and sugar snap peas; cook for an additional 5 minutes.
8. Garnish with fresh cilantro before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat until warmed through, or microwave on medium power.
