Ingredients

1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 cup unsalted butter
1/2 cup almond milk
1 cup almond butter
3 cups rolled oats
1 cup shredded coconut
1 tsp vanilla extract
1/4 tsp salt

Instructions

1. In a medium saucepan, mix together sugar, cocoa powder, butter, and almond milk over medium heat.
2. Stir continuously until the mixture reaches a rolling boil, then let it boil for 1 minute.
3. Remove the saucepan from heat and stir in almond butter, vanilla extract, and salt until smooth.
4. Gradually add rolled oats and shredded coconut, mixing thoroughly.
5. Drop spoonfuls of the mixture onto a lined baking sheet.
6. Let the bites cool at room temperature until set, approximately 30 minutes.
