Classic Vanilla Cake Mix

Ingredients

2 cups all-purpose flour
1 1/2 cups granulated sugar
3 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
2 tsp vanilla extract
1 cup whole milk
3 large eggs

Instructions

1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Add the softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.
4. In a separate bowl, combine the milk, eggs, and vanilla extract. Whisk until well blended.
5. Gradually add the wet ingredients to the dry mixture, mixing on medium speed until smooth and creamy.
6. Divide the batter evenly between the prepared cake pans.
7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Storage

Store cooled cakes in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Reheating

To reheat, place a slice in the microwave for 10-15 seconds or warm in a preheated oven at 300°F (150°C) for 5-10 minutes.
