Classic Truffle-Infused Mashed Potatoes

Ingredients
2 lbs russet potatoes
4 tbsp truffle butter
1 cup heavy cream
Salt to taste
Pepper to taste
2 tbsp chives, chopped
Instructions
1. Peel and cut the potatoes into quarters.
2. Place the potatoes in a large pot and cover with water; add a pinch of salt.
3. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Drain the potatoes and return them to the pot.
5. Add truffle butter, heavy cream, salt, and pepper to the potatoes.
6. Mash the potatoes until smooth and creamy.
7. Stir in the chopped chives and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over low heat, stirring occasionally, until warmed through. Add a little more cream if needed to restore creaminess.
