Ingredients
1 can (15 oz) green beans, drained
1 can (15 oz) wax beans, drained
1 can (15 oz) kidney beans, drained and rinsed
1/2 cup red onion, thinly sliced
1/2 cup celery, chopped
1/4 cup fresh parsley, chopped
1/3 cup apple cider vinegar
1/4 cup olive oil
1/4 cup granulated sugar
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. In a large mixing bowl, combine the drained green beans, wax beans, and kidney beans.
2. Add the red onion, celery, and fresh parsley to the bowl and toss to mix evenly.
3. In a separate small bowl, whisk together apple cider vinegar, olive oil, sugar, salt, and black pepper until the sugar is dissolved.
4. Pour the dressing over the bean mixture and gently toss to coat all ingredients evenly.
5. Cover the bowl and refrigerate for at least 2 hours, allowing the flavors to meld together.
6. Before serving, toss the salad again and adjust seasoning if necessary.
Storage
