Classic Stewed Tomatoes

Ingredients

3 lbs ripe tomatoes, peeled and chopped
1 large onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp sugar
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp crushed red pepper flakes
2 tbsp fresh parsley, chopped
1 tbsp lemon juice

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, sautéing until the onion is translucent.
3. Stir in the tomatoes, sugar, salt, pepper, basil, oregano, and red pepper flakes.
4. Bring the mixture to a simmer, reduce heat to low, and let it cook uncovered for 30-40 minutes, stirring occasionally until the tomatoes break down and the mixture thickens.
5. Stir in fresh parsley and lemon juice before serving.

Storage

Store cooled stewed tomatoes in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stovetop over medium heat, stirring occasionally, until warmed through.
