Classic Shrimp Delight

A timeless shrimp salad that captures the essence of fresh seafood with a delightful medley of vegetables, perfect for any seafood lover.

Ingredients

1 lb fresh shrimp, peeled and deveined
2 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
2 tbsp lemon juice
1 tsp lemon zest
1/4 cup mayonnaise
2 tbsp sour cream
1 tsp Dijon mustard

Instructions

1. Preheat a skillet over medium heat and add olive oil.
2. Season the shrimp with salt and pepper, and add to the skillet.
3. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
4. Remove shrimp from the skillet and let them cool.
5. In a large bowl, combine cherry tomatoes, cucumber, red onion, and parsley.
6. In a separate bowl, whisk together lemon juice, lemon zest, mayonnaise, sour cream, and Dijon mustard.
7. Add the cooled shrimp to the vegetable mixture.
8. Pour the dressing over the shrimp and vegetables, tossing gently to combine.
9. Chill in the refrigerator for at least 30 minutes before serving.

Storage

Store the salad in an airtight container in the refrigerator for up to 2 days.

Reheating

For best taste, enjoy the salad cold directly from the refrigerator. Reheating is not recommended.
