Classic Shrimp and Grits

Ingredients
1 pound large shrimp, peeled and deveined
1 cup stone-ground grits
4 cups water
1 cup shredded sharp cheddar cheese
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
2 cloves garlic, minced
1/4 cup chopped green onions
1 lemon, juiced
Instructions
1. Bring water to a boil in a medium saucepan.
2. Stir in the grits and salt, reduce to a simmer, and cook for 20-25 minutes, stirring occasionally.
3. While grits are cooking, heat olive oil in a skillet over medium heat.
4. Add garlic and sauté for 1 minute until fragrant.
5. Add shrimp to the skillet, seasoning with black pepper and smoked paprika, and cook for 3-4 minutes until pink and cooked through.
6. Remove shrimp from heat and toss with lemon juice.
7. Once the grits are cooked, remove from heat and stir in butter and cheese until creamy.
8. Serve the shrimp over the cheesy grits and garnish with chopped green onions.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat in the microwave or on the stovetop, adding a splash of water or milk to maintain creaminess.
