Classic Pumpkin Cookies

Ingredients

1 cup butter
1 cup granulated sugar
1 cup canned pumpkin
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup chopped walnuts

Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Beat in the pumpkin, egg, and vanilla extract until well combined.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the chopped walnuts.
7. Drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 12-15 minutes, or until the edges are lightly golden.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Storage

Store the pumpkin cookies in an airtight container at room temperature for up to 5 days.

Reheating

To reheat, place the cookies in a preheated oven at 300°F for 3-5 minutes.
