Ingredients
2 lbs russet potatoes
4 cups vegetable oil
1 tbsp sea salt
Instructions
1. Wash and peel the potatoes.
2. Slice potatoes thinly using a mandolin or sharp knife.
3. Rinse slices in cold water to remove excess starch.
4. Pat slices dry with a clean towel.
5. Heat vegetable oil in a deep fryer or large pot to 350°F.
6. Fry potato slices in small batches until golden brown, about 3-5 minutes.
7. Remove and drain on paper towels.
8. Sprinkle with sea salt while hot.
Storage
Store crisps in an airtight container at room temperature for up to 1 week.
Reheating
To reheat, place crisps in a 350°F oven for 3-5 minutes until crispy.
