Classic Homestyle Casserole
A comforting and hearty homestyle casserole featuring tender pieces of chicken, fresh vegetables, and a creamy, cheesy sauce, baked to golden perfection.

Ingredients
2 lbs chicken breast, diced
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onions
2 cloves garlic, minced
2 cups chicken broth
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup frozen peas
2 cups cooked egg noodles
1/2 cup breadcrumbs
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
Instructions
1. Preheat oven to 350°F.
2. In a large skillet over medium heat, add olive oil and sauté onions, carrots, celery, and garlic until soft.
3. Add diced chicken to the skillet and cook until browned.
4. Stir in chicken broth, cream of mushroom soup, salt, pepper, and thyme. Bring to a simmer.
5. Stir in cooked noodles, peas, and half of the cheddar cheese.
6. Transfer mixture to a greased baking dish. Top with remaining cheese and breadcrumbs.
7. Bake in preheated oven for 25-30 minutes, until cheese is bubbly and top is golden brown.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 15-20 minutes or until heated through.
