Classic Herb Infused Roasted Potatoes

Ingredients

2 lbs baby potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp rosemary, finely chopped
1 tsp thyme, finely chopped
1 tsp oregano, finely chopped
1/2 tsp smoked paprika
1/4 cup grated Parmesan cheese
1 tbsp chopped parsley for garnish

Instructions

1. Preheat your oven to 425°F (220°C).
2. Wash and halve the baby potatoes, then pat them dry.
3. In a large bowl, combine olive oil, salt, black pepper, garlic powder, rosemary, thyme, oregano, and smoked paprika.
4. Add the potatoes to the bowl and toss until evenly coated with the herb mixture.
5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
6. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
7. Remove from the oven and sprinkle with Parmesan cheese.
8. Garnish with chopped parsley before serving.

Storage

Store leftover roasted potatoes in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat potatoes in the oven at 350°F (175°C) for about 10 minutes or until warmed through.
