Classic Hearty Slow-Cooked Beef Roast

Ingredients

3 lbs beef chuck roast
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 onion, chopped
4 cloves garlic, minced
4 carrots, peeled and sliced
3 potatoes, peeled and quartered
2 cups beef broth
1 tbsp Worcestershire sauce
2 sprigs fresh thyme
2 bay leaves

Instructions

1. Season the beef chuck roast with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Brown the roast on all sides.
3. Transfer the roast to the slow cooker.
4. Add chopped onion, minced garlic, sliced carrots, and quartered potatoes to the slow cooker.
5. Pour beef broth and Worcestershire sauce over the ingredients.
6. Add fresh thyme sprigs and bay leaves.
7. Cover and cook on low for 8-10 hours, or until the beef is tender.
8. Remove thyme sprigs and bay leaves before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, or microwave on medium power in a microwave-safe dish.
