Classic Eggplant Parmesan

Classic Eggplant Parmesan is a timeless Italian dish featuring layers of crispy baked eggplant, rich marinara sauce, and melted cheeses, perfect for a comforting meal.

Ingredients

2 medium eggplants
1 tablespoon salt
2 cups all-purpose flour
4 large eggs
3 cups breadcrumbs
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
3 cups marinara sauce
1/2 cup olive oil
1/4 cup fresh basil leaves
1 teaspoon black pepper

Instructions

1. Preheat oven to 375°F.
2. Slice eggplants into 1/4-inch thick rounds, sprinkle with salt, and let sit for 30 minutes.
3. Rinse and pat dry the eggplant slices.
4. Dredge each slice in flour, dip in beaten eggs, and coat with breadcrumbs.
5. In a large skillet, heat olive oil over medium heat and fry eggplant slices until golden brown.
6. In a baking dish, layer marinara sauce, fried eggplant, mozzarella cheese, and Parmesan cheese. Repeat layers.
7. Top the final layer with remaining mozzarella and Parmesan cheese.
8. Cover with foil and bake for 25 minutes, then remove foil and bake for another 15 minutes until cheese is bubbly and golden brown.
9. Garnish with fresh basil before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a 350°F oven for 15-20 minutes, or until heated through.
