Classic Country Chicken Casserole

Ingredients
2 lbs boneless skinless chicken thighs
1 cup diced onions
2 cloves garlic minced
1 cup sliced carrots
1 cup chopped celery
1 cup frozen peas
1 cup chicken broth
1 cup heavy cream
2 cups cooked white rice
1 cup shredded sharp cheddar cheese
1 tbsp olive oil
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/2 cup breadcrumbs
2 tbsp melted butter
Instructions
1. Preheat your oven to 350°F.
2. Heat olive oil in a large skillet over medium heat.
3. Add onions and garlic, sauté until onions are translucent.
4. Stir in carrots and celery, cook for about 5 minutes until they begin to soften.
5. Add chicken thighs and cook until lightly browned, about 10 minutes.
6. Stir in chicken broth, heavy cream, thyme, salt, and pepper.
7. Bring the mixture to a simmer, then fold in cooked rice and frozen peas.
8. Transfer the mixture into a greased 9x13-inch baking dish.
9. Sprinkle cheddar cheese evenly over the top.
10. Combine breadcrumbs with melted butter, then sprinkle over the cheese layer.
11. Bake in the preheated oven for 30-35 minutes, until the top is golden and bubbly.
12. Allow to cool for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 15 minutes or until heated through. Can also be microwaved on medium power for 2-3 minutes.
