Classic Cold Pasta Delight

Ingredients
12 oz elbow macaroni
1 cup cherry tomatoes, halved
1/2 cup sliced black olives
1/2 cup diced cucumber
1/4 cup diced red onion
1/2 cup cheddar cheese, cubed
1/4 cup chopped fresh parsley
3/4 cup Italian dressing
Salt and pepper to taste
Instructions
1. Cook the elbow macaroni according to package instructions. Rinse with cold water and drain.
2. In a large bowl, combine the cherry tomatoes, black olives, cucumber, red onion, cheddar cheese, and parsley.
3. Add the cooked and cooled pasta to the vegetable mixture.
4. Pour the Italian dressing over the pasta salad and toss gently to coat.
5. Season with salt and pepper to taste.
6. Chill in the refrigerator for at least 1 hour before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Enjoy cold or allow it to sit at room temperature for 15 minutes to take the chill off before serving.
