Ingredients

1 whole chicken (3-4 lbs)
8 cups water
1 tablespoon salt

1 onion, quartered
2 carrots, peeled and chopped

2 cloves garlic, smashed
2 bay leaves

Instructions

1. Rinse the chicken under cold water and remove any excess fat or leftover giblets.
2. Place the chicken in a large pot and cover with water. Add salt, pepper, onion, carrots, celery, garlic, and bay leaves.
3. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the chicken is cooked through and tender.
4. Remove the chicken from the pot and let it rest for 10 minutes before carving. Strain the broth and reserve for other uses or serve as a soup.

Storage

Store the boiled chicken in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the chicken pieces and broth separately for up to 3 months.

Reheating

To reheat, place the chicken pieces in a saucepan with a little broth. Heat over medium-low heat until warmed through, or microwave on medium heat until hot.
