Citrus Zest Hollandaise

A refreshing twist on traditional Hollandaise sauce, this Citrus Zest Hollandaise adds a bright, tangy flavor perfect for spring dishes. Made with fresh lemon and orange zest, it complements seafood and vegetables beautifully.

Ingredients

3 large egg yolks
1 tbsp freshly squeezed lemon juice
1 tbsp freshly squeezed orange juice
1/2 cup unsalted butter, melted
1/4 tsp salt
1/4 tsp white pepper
1 tsp lemon zest
1 tsp orange zest

Instructions

1. In a heatproof bowl, whisk together egg yolks, lemon juice, and orange juice.
2. Place the bowl over a saucepan of simmering water, ensuring the bowl does not touch the water, and whisk continuously until the mixture begins to thicken.
3. Slowly drizzle in the melted butter while continuing to whisk until the sauce becomes thick and creamy.
4. Remove from heat, then stir in salt, white pepper, lemon zest, and orange zest.
5. Serve immediately or keep warm in a water bath until ready to use.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat gently over a double boiler, stirring continuously until warmed through.
