Citrus White Bean Chicken Chili
A zesty twist on classic White Bean Chicken Chili with a hint of citrus and fresh cilantro, perfect for a refreshing yet hearty meal.

Ingredients
1 tbsp olive oil
1 lb boneless skinless chicken breast, diced
1 large onion, diced
3 cloves garlic, minced
1 jalapeño, seeded and diced
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
1/2 tsp chili powder
2 cans (15 oz each) white beans, drained and rinsed
4 cups chicken broth
1/2 cup fresh lime juice
1/4 cup fresh orange juice
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned. Remove chicken and set aside.
2. In the same pot, add onion, garlic, and jalapeño. Sauté until onion is translucent.
3. Stir in cumin, coriander, smoked paprika, and chili powder. Cook for 1 minute until spices are fragrant.
4. Return chicken to the pot. Add white beans and chicken broth.
5. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Stir in fresh lime juice and orange juice. Season with salt and pepper.
7. Garnish with cilantro and serve with lime wedges.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over medium heat until warmed through.
