Citrus Sugar Cookies

Ingredients

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon orange zest
1 tablespoon lemon zest
2 tablespoons orange juice
1 tablespoon lemon juice
1/4 cup sanding sugar for sprinkling

Instructions

1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
3. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
4. Beat in the egg, vanilla extract, orange zest, lemon zest, orange juice, and lemon juice until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Roll dough into 1-inch balls and place on the prepared baking sheets, spacing about 2 inches apart.
7. Flatten each ball slightly with the bottom of a glass and sprinkle with sanding sugar.
8. Bake for 10-12 minutes or until the edges are lightly golden brown.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to 1 week.

Reheating

To reheat, place cookies in a preheated oven at 300°F (150°C) for 3-5 minutes to refresh.
