Ingredients

1 medium head of green cabbage (about 2 lbs)
1 lemon, zested and juiced
1 orange, zested and juiced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped

Instructions

1. Core and cut the cabbage into quarters.
2. In a large pot, bring water to a boil and add salt.
3. Add the cabbage to the boiling water and cook for 10-12 minutes until tender.
4. Drain the cabbage and set aside.
5. In the same pot, heat olive oil over medium heat.
6. Add minced garlic and sauté until fragrant.
7. Add the lemon and orange zest and juice to the pot.
8. Return the cabbage to the pot and toss to coat with the citrus mixture.
9. Season with black pepper and garnish with fresh parsley before serving.
