Ingredients
2 lbs carrots, peeled and cut into sticks
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 orange, zested and juiced
1 tbsp honey
1/4 cup fresh parsley, chopped
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper until evenly coated.
3. Add chopped rosemary, thyme, orange zest, and orange juice to the bowl, mixing well to combine the flavors.
4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
5. Roast in the oven for 25-30 minutes, or until the carrots are tender and slightly caramelized.
6. Drizzle with honey and sprinkle fresh parsley over the roasted carrots before serving.
Storage
Store roasted carrots in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 8-10 minutes or until heated through. Alternatively, microwave on high for 1-2 minutes.
