Citrus Herb Roast Pork Loin

Ingredients

3 lbs pork loin
1/4 cup olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh sage, chopped
1 tsp salt
1/2 tsp black pepper
1 lemon, zested and juiced
1 orange, zested and juiced
1/2 cup chicken broth

Instructions

1. Preheat oven to 375°F (190°C).
2. In a small bowl, combine olive oil, garlic, rosemary, thyme, sage, salt, and pepper.
3. Rub the herb mixture evenly over the pork loin.
4. In a roasting pan, place the pork loin and pour lemon and orange juices over it.
5. Add chicken broth to the pan to keep the pork moist during roasting.
6. Roast in the oven for approximately 1 hour and 20 minutes, or until the internal temperature reaches 145°F (63°C).
7. Remove from oven and let it rest for 10 minutes before slicing.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in a preheated oven at 300°F (150°C) for 10-15 minutes or until warmed through.
