Citrus Herb Pasta Salad

A zesty and refreshing Citrus Herb Pasta Salad that combines the bright flavors of fresh herbs and citrus fruits, perfect for summer picnics or light lunches.

Ingredients

8 oz rotini pasta
1/4 cup olive oil
1/4 cup lemon juice
1 tbsp lime juice
1 tsp orange zest
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup cucumber, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup feta cheese, crumbled
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions until al dente, then drain and rinse with cold water.
2. In a small bowl, whisk together olive oil, lemon juice, lime juice, and orange zest to make the dressing.
3. In a large bowl, combine the cooked pasta, cherry tomatoes, red onion, cucumber, parsley, and basil.
4. Pour the dressing over the pasta salad and toss to coat evenly.
5. Gently fold in the crumbled feta cheese.
6. Season with salt and pepper to taste.
7. Chill the pasta salad in the refrigerator for at least 30 minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
