Ingredients

3 lbs sweet potatoes
1/2 cup orange juice
1/4 cup lemon juice
1/2 cup brown sugar
1/4 cup honey
1/4 cup unsalted butter
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 tbsp grated orange zest
1/2 cup pecans, chopped

Instructions

1. Preheat oven to 375°F (190°C).
2. Peel and slice sweet potatoes into 1/4-inch thick rounds.
3. In a saucepan, combine orange juice, lemon juice, brown sugar, honey, and butter. Heat over medium, stirring until butter melts and mixture is smooth.
4. Stir in cinnamon, nutmeg, salt, and orange zest.
5. Arrange sweet potato slices in a 9x13-inch baking dish.
6. Pour the citrus mixture over the sweet potatoes, ensuring all slices are coated.
7. Cover with foil and bake for 30 minutes.
8. Remove foil, sprinkle chopped pecans over the top, and bake for another 15 minutes or until sweet potatoes are tender and the glaze is bubbling.
9. Let cool for a few minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in the oven at 350°F (175°C) for 10-15 minutes until warmed through.
