Ingredients
6 cups of cubed day-old cinnamon rolls
4 large eggs
2 cups whole milk
1 cup heavy cream
1 cup granulated sugar
2 tsp vanilla extract
1 tsp ground cinnamon
1/2 cup raisins
1/2 cup chopped pecans
4 oz cream cheese, softened
1/2 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Instructions
1. Preheat the oven to 350°F and grease a 9x13-inch baking dish.
2. In a large bowl, whisk together the eggs, whole milk, heavy cream, sugar, vanilla extract, and ground cinnamon.
3. Add the cubed cinnamon rolls, raisins, and pecans to the bowl, and gently toss to coat.
4. Pour the mixture into the prepared baking dish, spreading evenly.
5. Bake for 45-50 minutes, until set and golden brown.
6. While baking, prepare the glaze by beating the cream cheese until smooth. Add powdered sugar, milk, and vanilla extract, mixing until well combined.
7. Drizzle the cream cheese glaze over the warm bread pudding before serving.
