Cinnamon-Infused Peach Pie

Ingredients

4 cups sliced fresh peaches
1 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1/2 tsp vanilla extract
1/4 tsp salt
2 tbsp unsalted butter
1 egg yolk
1 tbsp milk
1 package refrigerated pie crusts

Instructions

1. Preheat oven to 425°F (220°C)
2. In a large bowl, combine peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt. Mix gently until peaches are well coated
3. Roll out one pie crust and place in a 9-inch pie pan
4. Pour peach mixture into the crust and dot with small pieces of butter
5. Cover with the second pie crust, crimp the edges to seal, and cut slits for venting
6. Beat the egg yolk with milk and brush over the crust
7. Bake for 45-50 minutes or until crust is golden and filling is bubbly
8. Let cool for at least 2 hours before serving

Storage

Store the pie in an airtight container in the refrigerator for up to 4 days

Reheating

Reheat slices in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through
