Chocolate Lava Cake

Ingredients

1 cup unsalted butter
8 oz semisweet chocolate chips
1/2 cup all-purpose flour
1 1/2 cups powdered sugar
4 large eggs
4 egg yolks
1 tsp vanilla extract
1/4 tsp salt
Non-stick cooking spray
Vanilla ice cream for serving

Instructions

1. Preheat your oven to 425°F (220°C) and spray ramekins with non-stick cooking spray.
2. In a microwave-safe bowl, combine the butter and chocolate chips. Microwave in 30-second intervals, stirring in-between, until completely melted and smooth.
3. In a large mixing bowl, whisk together the flour, powdered sugar, and salt.
4. Add the eggs, egg yolks, and vanilla extract into the dry ingredients, then pour in the melted chocolate mixture. Stir until well combined.
5. Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
6. Place ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.
7. Carefully invert each ramekin onto a plate and let sit for a few seconds to release, then remove the ramekin.
8. Serve immediately with a scoop of vanilla ice cream.

Storage

Store any leftover cakes in airtight containers in the refrigerator for up to 3 days.

Reheating

To reheat, microwave individual cakes for 20-30 seconds until warm.
