Ingredients
1 cup all-purpose flour
2 tbsp unsweetened cocoa powder
1/4 cup granulated sugar
1/4 tsp salt
1/4 cup unsalted butter, cubed
1 large egg
1/4 cup red wine
1/2 cup ricotta cheese
1/2 cup mascarpone cheese
1/4 cup powdered sugar
1 tbsp matcha powder
1 tsp vanilla extract
1/4 cup mini chocolate chips
Vegetable oil for frying
Instructions
1. In a bowl, mix flour, cocoa powder, sugar, and salt. Add butter and mix until crumbly.
2. Beat in the egg and wine until dough forms. Knead until smooth, wrap, and chill for 30 minutes.
3. Roll dough thin and cut into 4-inch circles. Wrap circles around cannoli tubes, sealing edges with water.
4. Heat oil to 350°F and fry shells for 2-3 minutes until golden. Drain and cool.
5. In a separate bowl, blend ricotta, mascarpone, powdered sugar, matcha, and vanilla until smooth.
6. Fold in mini chocolate chips.
7. Fill cooled shells with matcha filling using a piping bag.
Storage
Store filled cannoli in an airtight container in the refrigerator for up to 2 days.
Reheating
Cannoli are best enjoyed fresh, but if needed, allow them to sit at room temperature for about 15 minutes before serving.
