Chili Lime Shrimp Tacos

Ingredients

1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 lime, juiced and zested
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp salt
8 corn tortillas
1 cup shredded cabbage
1/2 cup fresh cilantro, chopped
1/4 cup red onion, finely chopped
1 avocado, sliced
1/4 cup cotija cheese, crumbled
1 lime, cut into wedges for serving

Instructions

1. In a large bowl, combine olive oil, lime juice and zest, chili powder, garlic powder, cayenne pepper, and salt.
2. Add shrimp to the bowl and toss to coat evenly. Let marinate for 15 minutes.
3. Heat a large skillet over medium-high heat. Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through.
4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
5. Assemble the tacos by placing a portion of shrimp on each tortilla, topped with shredded cabbage, cilantro, red onion, avocado, and cotija cheese.
6. Serve with lime wedges on the side.

Storage

Store leftover shrimp and toppings separately in airtight containers in the refrigerator for up to 2 days. Keep tortillas sealed in a bag at room temperature.

Reheating

Reheat shrimp in a skillet over medium heat until just warmed through. Warm tortillas in a dry skillet before reassembling tacos.
