Ingredients

1 tbsp olive oil
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) tomato sauce
2 tbsp chili powder
1 tsp ground cumin
Salt and pepper to taste
8 hot dogs
8 hot dog buns
2 cups shredded cheddar cheese
1/4 cup chopped green onions
1/4 cup diced jalapeños (optional)

Instructions

1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until softened.
2. Add ground beef to the skillet, cook until browned. Drain excess fat.
3. Stir in kidney beans, tomato sauce, chili powder, cumin, salt, and pepper. Simmer for 20 minutes.
4. While chili simmers, grill or steam the hot dogs until fully cooked.
5. Place hot dogs in buns, top generously with chili.
6. Sprinkle shredded cheddar cheese, green onions, and jalapeños on top.
7. Place assembled chili cheese dogs under a broiler for 2-3 minutes, until cheese is melted and bubbly.

Storage

Store leftover chili in an airtight container in the refrigerator for up to 3 days. Store hot dogs and buns separately.

Reheating

Reheat the chili in a saucepan over medium heat, stirring occasionally, until heated through. Reheat hot dogs in the microwave or on a stovetop until warm.
