Chickpea and Spinach Stir-Fry
A quick and easy stir-fry that combines nutrient-dense chickpeas and spinach with aromatic garlic and ginger, finished with a savory splash of soy sauce for a delicious and healthful meal.

Ingredients
2 tbsp olive oil
3 cloves garlic, minced
1 inch ginger, grated
1 can (15 oz) chickpeas, drained and rinsed
4 cups fresh spinach leaves
2 tbsp soy sauce
1/2 tsp black pepper
1 tbsp sesame seeds for garnish
Instructions
1. Heat olive oil in a large pan over medium heat.
2. Add minced garlic and grated ginger, sauté until fragrant, about 1 minute.
3. Stir in the chickpeas and cook for 3-4 minutes until slightly golden.
4. Add the spinach leaves and soy sauce, stirring gently until the spinach wilts, about 2 minutes.
5. Season with black pepper and remove from heat.
6. Garnish with sesame seeds before serving.
Storage
Store leftovers in an airtight container and refrigerate for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave for 1-2 minutes until hot.
