Chicken Marsala with Sage and Lemon

Ingredients
4 boneless skinless chicken breasts
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
4 tablespoons unsalted butter
1 cup sliced mushrooms
2 cloves garlic, minced
1 cup Marsala wine
1 cup chicken broth
2 tablespoons fresh sage, chopped
1 lemon, juiced and zested
2 tablespoons heavy cream
Salt and pepper to taste
Chopped parsley for garnish
Instructions
1. Begin by pounding the chicken breasts to an even thickness of about 1/2 inch.
2. In a shallow dish, combine the flour, salt, and black pepper.
3. Dredge each chicken breast in the flour mixture, shaking off any excess.
4. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
5. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
6. In the same skillet, add the remaining butter. Once melted, add the mushrooms and sauté until golden brown.
7. Add the minced garlic and cook for an additional minute until fragrant.
8. Pour in the Marsala wine and chicken broth, scraping the browned bits from the bottom of the skillet.
9. Bring the mixture to a simmer and add the fresh sage, lemon juice, and lemon zest.
10. Return the chicken to the skillet, reduce the heat to low, and cook for another 5-7 minutes, until the sauce is slightly reduced.
11. Stir in the heavy cream and season with salt and pepper to taste.
12. Garnish with chopped parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a skillet over low heat until warmed through, adding a splash of chicken broth if needed to loosen the sauce.
