Ingredients

4 boneless skinless chicken breasts
8 slices prosciutto
4 ounces cream cheese, softened
1/2 cup artichoke hearts, drained and chopped
1/2 cup fresh spinach leaves, chopped
1 cup shredded mozzarella cheese
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon olive oil

Instructions

1. Preheat your oven to 375°F (190°C).
2. Pound the chicken breasts to about 1/4 inch thickness.
3. In a bowl, mix together cream cheese, chopped artichoke hearts, and chopped spinach until well combined.
4. Spread the cream cheese mixture evenly over each chicken breast.
5. Place two slices of prosciutto on top of each chicken breast.
6. Sprinkle mozzarella cheese over the prosciutto.
7. Roll up each chicken breast and secure with toothpicks.
8. Prepare three separate bowls: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan cheese, salt, pepper, garlic powder, and onion powder mixed together.
9. Dredge each chicken roll in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
10. In a large oven-safe skillet, heat olive oil over medium-high heat.
11. Sear the chicken rolls on all sides until golden brown.
12. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
13. Let the chicken rest for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.
