Chicken and Cheese Roll-Ups

Ingredients

4 large flour tortillas
8 oz cooked chicken breast, sliced
4 slices cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup mayonnaise
1/4 cup Dijon mustard
1 cup fresh spinach leaves
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste

Instructions

1. In a small bowl, mix mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
2. Lay out the flour tortillas on a clean surface.
3. Spread the mustard-mayo mixture evenly over each tortilla.
4. Place slices of chicken evenly across the tortillas.
5. Place a slice of cheddar cheese on top of the chicken on each tortilla.
6. Sprinkle shredded mozzarella cheese over the cheddar cheese.
7. Add a layer of fresh spinach leaves.
8. Carefully roll each tortilla tightly and secure with toothpicks if necessary.
9. Slice each roll-up into 2-3 inch pieces for easy serving.

Storage

Store roll-ups in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place roll-ups on a microwave-safe plate and microwave for 30 seconds to 1 minute until warmed through.
