Chewy Walnut Oatmeal Raisin Cookies

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a small bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
3. In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in the egg and vanilla extract until fully combined.
5. Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.
6. Fold in the oats, raisins, and chopped walnuts.
7. Drop tablespoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
8. Bake for 10-12 minutes, or until the edges are golden brown.
9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store cookies in an airtight container at room temperature for up to 5 days.
Reheating
To reheat, place in a preheated oven at 300°F for 3-5 minutes or until warmed through.
