Ingredients
1 cup unsalted butter, softened
1 cup almond butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 1/2 cups all-purpose flour
3 cups old-fashioned oats
1/2 tsp ground cinnamon
1/2 cup chopped almonds, toasted
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large mixing bowl, cream together the softened butter, almond butter, brown sugar, and granulated sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
4. In a separate bowl, whisk together baking soda, salt, flour, oats, and cinnamon.
5. Gradually add dry ingredients to the wet mixture, stirring just until combined.
6. Fold in chopped toasted almonds.
7. Drop dough by rounded tablespoons onto prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 10-12 minutes, or until edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
