Ingredients
2 dozen fresh oysters
1 cup oyster liquor
4 tablespoons unsalted butter
1 medium onion, finely chopped
1/2 teaspoon celery seed
1/4 teaspoon cayenne pepper
1 cup whole milk
1 cup heavy cream
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Rinse the oysters under cold water and set aside, reserving the liquor.
2. In a large saucepan, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
3. Stir in the celery seed and cayenne pepper, cooking for an additional minute.
4. Add the oyster liquor to the saucepan and bring to a gentle simmer.
5. Stir in the milk and heavy cream; season with salt and black pepper. Heat gently, ensuring the mixture does not boil.
6. Add the oysters to the saucepan and cook until they are just curled at the edges, about 2-3 minutes.
7. Remove from heat, garnish with fresh parsley, and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat gently in a saucepan over low heat until warmed through. Avoid boiling to prevent curdling.
