Ingredients

3 tbsp butter
1 small onion, diced
2 jalapeños, seeded and diced
2 cloves garlic, minced
3 cups corn kernels, fresh or frozen
1 cup heavy cream
1/2 cup cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
1/4 tsp salt
1/4 tsp black pepper
1/2 cup breadcrumbs
1/4 cup Parmesan cheese, grated

Instructions

1. Preheat the oven to 350°F.
2. In a skillet, melt the butter over medium heat.
3. Add the onions and jalapeños, sauté until soft, about 5 minutes.
4. Stir in the garlic and cook for another minute.
5. Add the corn, cream, cheddar, and Monterey Jack cheese, mix well until the cheese is melted.
6. Season with salt and pepper, then transfer the mixture to a greased casserole dish.
7. In a small bowl, combine breadcrumbs and Parmesan cheese, then sprinkle over the casserole.
8. Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
